Unlike Spitfire Audio libraries, the MIDI channel is not one of the options included in the instrument header of Sound Dust instruments.
Instead to change MIDI channel, first click on the wrench icon to switch into Instrument Edit mode, then click Script Editor and you will find the MIDI channel as one of the options under Source.
